White Chicken Chili

I recently posted on Facebook about making white chicken chili last weekend. I have had several requests for the recipe, so figured I would post it here. Bob and I were at the grocery store and came across Carroll Shelby's White Chicken Chili Mix. We decided to give it try! The mix comes with 4 indivual spice packets. You can make it mild or spicy, I went spicy and used all the spices. I also added a can of white beans and a can of diced tomatoes, so I guess it wasn't technically white chili, but it was delicous!

2 lbs of chicken-I used ground chicken, but you can also used diced chicken or even turkey.
1 can of white beans
1 can of diced tomatoes(optional)
water(the amount is on the box)

Brown the chicken or turkey. Add all the ingredients(except for the cajun seasoning) in a large pot and simmer. Add as much or as little of the cajun seasoning about 10 minutes before serving. Serve with bisquits or cornbread. I served it over rice, makes a great lunch or dinner! Leftovers were great for lunch as well! Enjoy!

Happy Birthday America!

Happy July 4th! I wanted to share a recipe for Calico Beans. A woman in my office brought in a crock pot full of these beans one day and I absolutely loved them, so had to get the recipe. I made them today for our early July 4th celebration at my mother in laws. We had hamburgers, hot dogs, pasta salad, corn on the cob and Calico Beans. They were a huge hit, so here is the recipe:

1 lb hamburger, drained
1/2 lb bacon, cut into small pieces(optional, I skipped the bacon altogether to cut down on the fat)
1 med onion, chopped
1 can lima beans, drained
1 can butter beans, drained
1 can of kidney beans, drained
1 large can of Bush's Baked Beans
1/2 cup white sugar
3/4 cup of brown sugar
1/2 cup ketchup
2 tablespoons white vinegar
2 tablespoons dry mustard

Brown hamburer, bacon and onion together, drain. Put into crockpot with all of the beans. Mix the remaining ingredients together in a separate bowl. Pour over beans/meat and mix together. Heat in the crockpot. Great for family get togethers and picnics. You can add another can of Bush's Bakes Beans to stretch the recipe a bit more for a large crowd. Enjoy!!!
